Chicken wings are always a favourite and this Chinese Chicken Wings in Red Wine Recipe is a wonderful combination of Oriental spices and flavourings together with a red wine sauce. If you purchase complete chicken wings there is no need to throw away the wing tips, use them when making the chicken stock.


Ingredients for Chinese Chicken Wings in Red Wine Recipe

8 Chicken Wing Drummettes
8 Chicken Wing Wingettes (Centre pieces)

8 Large Shiitake Mushrooms, stems discarded, diced
4 Spring Onions (Scallions) white section only,sliced
200 g Bamboo Shoots, sliced (If using fresh Bamboo Shoots parboil first to remove any bitterness)
40 g Fresh Ginger, grated
200 ml Chicken Stock
5 Tbsp Soy Sauce
2 Tbsp Sugar
1 Tsp Monosodium Glutamate (MSG), (Optional)
3 Tbsp Chinese Rice Wine (Dry Sherry may be substituted)
4 Tbsp Red Wine
3 Tbsp Oyster Sauce
2 Tbsp Sesame Oil
Oil for deep frying


1. Deep fry the chicken wing pieces in oil 3-4 at a time until they start to turn golden brown. Remove with a slotted spoon and drain on kitchen paper to absorb any excess cooking oil.

2. Add 3 Tbsp of the oil used for deep frying to a wok or large pan and reheat until the oil starts to shimmer. Add the Spring Onions and Ginger to the wok or pan and stir lightly until their aroma is released.

3. Add the Mushrooms and Bamboo Shoots and continue to stir fry for 1-2 minutes.

4. Add the Chicken Stock, Soy Sauce, Sugar, Chinese Rice Wine, Oyster Sauce and Monosodium Glutamate. Stir well. Add the Chicken Wing pieces. Add the Red Wine. Bring to the boil, reduce the heat, cover and simmer for about 10 minutes, adding a little water if too dry.

5. Remove lid and add the Sesame Oil. Stir well, and serve immediately.
