King Oyster Mushroom – Pleurotus Eryngii

The King Oyster Mushroom, Pleurotus Eryngii, is a marvellous mushroom to cook with. The King Oyster Mushroom requires a little longer to cook than some other mushrooms because of their thick meaty stems. Uncooked, the King Oyster Mushroom has very little taste but when cooked they have the typical mushroom umami flavour and a texture similar to Abalone.

Pleurotus Eryngii grows in clusters and with age the cap becomes indented and looking a little like a trumpet which is why the King Oyster Mushroom is sometimes called the King Trumpet Mushroom or the French Horn Mushroom. Other names for this mushroom include Eryngii and Orangi. Native to the Mediterranean area, Pleurotus Eryngii is widely grown throughout Asia where it is very popular because of its great flavour and long shelf life.
