Authentic Japanese Teriyaki Sauce
By admin | September 24, 2009
Authentic Japanese Teriyaki Sauce is so simple to make. Our Teriyaki Sauce recipe has just 3 ingredients. Some Teriyaki Sauce purchased commercially includes other ingredients but that is not the Authentic Japanese recipe. The most important ingredient is Mirin which is a Japanese sweet white wine. The Mirin helps give the food an attractive lustre. If you cannot find Mirin you may substitute Sake with a little extra sugar or honey.
Teriyaki is actually a Japanese method of cooking where the food is basted several times with Teriyaki sauce during cooking. Teriyaki is 2 words, Teri = Shining, Yaki = to grill. It is this sauce which gives the food its characteristic shiny appearance.

Ingredients for Authentic Japanese Teriyaki Sauce
1 Cup Mirin
1 Cup Soy Sauce
4 Tbsp Sugar
Method
1. Place all the ingredients in a pan over a medium heat and bring to the boil, stirring to ensure all the sugar is dissolved.
2. Simmer for 2-3 Minutes.
3. Remove pan from the heat and allow the sauce to cool.

My husband LOVES teriyaki! How long would this sauce keep for? I presume it’d be kept in the fridge?

Actually there is no need to keep Teriyaki sauce in a fridge. The high sugar content acts as a preservative so the sauce will keep on the shelf for a considerable time, certainly for a year or two, not that I’ve ever been able to make Teriyaki sauce last that long in this household.!!
