    Chinese Sauces – Black Bean Sauce Recipe

    Black Bean Sauce, one of the best known Chinese sauces, is made with fermented Chinese Black Beans. This Black Bean Sauce Recipe makes a thick Black Bean paste which is then liquidized to form a thinner sauce. It is important to soak the Black Beans in water for about 15 minutes and thoroughly rinse and drain them before using or the Black Bean sauce will be too salty.

    Ingredients for Black Bean Sauce Recipe

    1/2 Cup Garlic, skin removed and very finely chopped
    1/2 Cup Ginger, peeled and grated
    1/3 Cup Fermented Chinese Black Beans, soaked and washed
    2 Stalks Fresh Coriander, finely chopped
    2 Red Chili Peppers, finely chopped
    1/3 Cup Chinese Rice Wine
    1 Cup Cooking Oil
    Salt
    Pepper

    Method

    1. Mash the fermented Chinese Black Beans with a spoon
    2. Heat 1/4 Cup of the cooking oil over a high heat in a wok or large pan
    3. Add the Fermented Chinese Black Beans, Chillies, Ginger, and Garlic to the pan and stir fry until soft.
    4. Add the Coriander and Chinese Rice Wine. Bring to the boil and reduce the heat. Season with salt and pepper. Cook for about 3 minutes stirring occasionally.
    5. Remove from the heat and allow to cool
    6. Put the cooled mixture into a blender, add the remaining 3/4 Cup of cooking oil and puree.
    7 Store in an air tight jar or container. Stir well before use.
