India is the largest producer of Mango Powder and also the largest consumer. Mango Powder is used in curries, chutneys and pickles, soups and dhals to add a touch of tartness without adding any liquid.
Another use for Mango Powder is as a meat tenderizer. Rub the mango powder into meat or poultry and leave for a few hours before cooking. Mango Powder is readily available from Asian food stores but can easily be made at home.

Recipe for Mango Powder
Select unripe, green Mangoes and peel them. ( If the mangoes show any signs of ripeness they will not be suitable). Cut the mangoes into strips and lay the strips to dry in the sun. When they are completely dried and gnarled, grind the pieces down using an electric grinder or mortar and pestle. Store in an airtight jar.
