Mango Sticky Rice is a Thai Dessert that tastes simply sublime. What could be more delicious than ripe luscious sweet mango and Thai Sticky Rice soaked in Coconut milk. Every visitor to Thailand must try this dessert at least once during their stay but it is also easy to make at home if you have access to glutinous rice. Unfortunately there is no substitute for glutinous rice, long grain rice just will not do.

Ingredients for Mango Sticky Rice – Thai Dessert
1 Cup Thai Sticky Rice, cooked
2 Fresh ripe mangoes, peeled and sliced
1 Cup Coconut Milk
2 Tbsp Sugar
Pinch of salt
Method
1. Add the coconut milk, sugar and salt to a pan and bring to the boil slowly over a medium heat, stirring constantly. Reduce the heat and simmer for about 5 minutes. Remove from the heat and allow to cool.
2. Pour 3/4 of the cooled mixture onto the cooked glutinous rice and leave for a few minutes to allow the rice to absorb all the coconut milk.
3. Put some of the Sticky Rice into a dish and arrange some slices of mango on top.
4. Drizzle some of the remaining coconut milk over the top of the mangoes and serve.

You’re right that this dessert is simply sublime and everyone should try it at least once in their lives. We go have access to the glutinous rice here, unfortunately for those in the U.S. you may find that getting ripe mangoes is a struggle. Most of the mangoes sold here are Mexican and they are picked before they are ripe to aid in shipping. They are not nearly as sweet and succulent as the mangoes you will get in the Big Mango!
