Stir Fry Beef – Thai Beef in Oyster Sauce

This stir fry beef recipe, Thai Beef in Oyster Sauce is a great favourite in Thailand. Thai Beef in Oyster Sauce, (ผัดเนื้อน้ำมันหอย). is a perfect example of Thai cuisine at its best, using fresh ingredients and quickly prepared and cooked. Neua Pad Nam Man Hoy, as this recipe is known as in Thailand, is one Thai dish that is hardly spicy at all but still rich and full of flavour. It is important to use good quality frying beef for this recipe because the cooking time is so short.

Ingredients for Stir Fry Beef – Thai Beef in Oyster Sauce
450 gm Good quality Beef for frying (we used Tenderloin), finely sliced and cut into 1″ strips
1 Tbsp Corn Starch
4 Cloves Garlic, skinned and finely chopped
2 Tbsp Light Soy Sauce
3 Tbsp Vegetable Oil
3 Dried Shiitake Mushrooms, soaked in warm water and finely sliced
250 gm Straw Mushrooms, cut in half
1/3 Cup Oyster Sauce
1 Tsp Sugar
3 Spring Onions (Scallions), white section only, sliced
1/2 Tsp Freshly ground Black Pepper
2 Small Red Chillies, Prik Chee Fah, sliced
2-3 Spring Onion (Scallion) leaves for garnish
Method
1. Place the Beef, Corn Starch and Soy Sauce in a bowl and mix well. Leave for about 20 minutes. Remove the Beef and set aside.
2. Place a wok over a medium heat and add the vegetable oil. When the oil is hot, add the garlic and fry until light golden in colour. Add mushrooms (both kinds), and continue frying until the mushrooms are almost cooked. Add the beef and fry until the beef is cooked through.
3. Add the oyster sauce, sugar and black pepper. Stir well. Add the white spring onions (scallions) and prik chee fah chillies. Mix well.
4. Serve, garnished with spring onion leaves.

is the beef raw before this whole thing. or do you use cooked beef?
