This cocktail jelly with Thai coconut cream uses all natural colourings. The colours of the cocktail jelly come from Hibiscus tea and Pandanus leaves and of course the Thai coconut cream. You can use any type and shape of mold you wish. We used cocktail glasses for our Thai Coconut Cream Jelly as we were intending to serve this simple Thai dessert at a dinner party.

Ingredients for Thai Coconut Cream – Cocktail Jelly

Green Jelly


4 Cups Pandanus juice (to make this yourself, simply whisk 4 or 5 Pandanus leaves in a blender with 4 cups of cold water and then strain off the the leaves.)
1 Tbsp Agar Agar Powder
1 1/2 Cups Sugar

Red Jelly

4 Cups Hibiscus tea
1 Tbsp Agar Agar Powder
1 1/2 Cups Sugar

Coconut Cream

4 Cups Coconut Cream
1 Tbsp Agar Agar Powder
3 Tbsp Sugar

Method



Green Jelly

Pour the Pandanus juice into a saucepan over a medium heat and add the Agar Agar. When the water is boiling add the sugar and stir well until all the sugar is dissolved. Remove from the heat and place the pan in a bowl of hot water.

Red Jelly

Pour the Hibiscus tea into a saucepan over a medium heat and add the Agar Agar. When the water is boiling add the sugar and stir well until all the sugar is dissolved. Remove from the heat and place the pan in a bowl of hot water.

Coconut Cream

Pour the Coconut cream into a saucepan over a medium heat and add the Agar Agar. When the coconut cream is nearly boiling and the Agar Agar has completely dissolved add the sugar and stir well until all the sugar is dissolved. Remove from the heat and place the pan in a bowl of hot water.

Pour a little of the contents of one of the pans into the molds and allow to almost set.
Pour a little of the contents of another pan into the molds and allow to almost set.
Repeat this process until all the molds are filled. Place the molds into a refrigerator for 30 minutes before removing the jellies from the molds. Serve cold
